Thai-Style Coconut Sago Pudding
This is a very simple dessert that can easily prepared. It is a very popular dessert in Thailand and is often served at the end of a meal. I really like the texture of the sago and the coconut milk. It is very smooth and refreshing. It is a perfect dessert for summer (Although we are going into winter in Australia).
Ingredients:
- 50g sago (Can be found in coles or woolworths, but its called “tapioca pearl”)
- 300ml coconut milk
- 20g Gelatine powder
- 30g sugar
- some shredded coconut (optional)
Steps:
- Boil sago in water for 5-7 minutes, without lid.
- Cover the pot with lid and simmer for 30 minutes, to allow the sago to absorb the water.
- Drain the sago and rinse with cold water.
- Mix the gelatine powder with 100ml of cold water and let it sit for 5 minutes.
- Heat the coconut milk and sugar in a pot until the sugar is dissolved, no need to be boiled.
- Add the gelatine mixture into the coconut milk and stir until the gelatine is dissolved.
- Add the sago into the coconut milk and stir.
- Pour the mixture into a container and let it cool down.
- Put the container into the fridge for the whole night.
- Cut the pudding into pieces and serve with shredded coconut. You can even bake the shredded coconut to make it more crispy.
The one I made is a bit too soft, I think I should add more gelatine powder, as I only used 5-10g this time. But it still tastes good.
